Franchisees want to tap into areas that are “underserved” by brick-and-mortar stores.

Almost 18 years after opening its first location near Southern Methodist University's campus, dessert shop Porky O's will soon open its second brick-and-mortar location. That store will open in Rockwall.
Pokey O's Rockwall is scheduled to open March 22 at 2455 Ridge Road, Suite 110. This brand is known for its cookies and ice cream, especially its ice cream sandwiches that combine the two.
The brand can be found at food trucks scattered throughout the Dallas-Fort Worth metro. But Cole Feigl and Trevor Anderson, who signed a franchise agreement to open a second brick-and-mortar location, believe there are plenty of opportunities east of Dallas.
“A big part of our vision is to really serve underserved communities in East Texas,” said Fagle, who is also chief marketing officer for Porky O’s. “Texas has some of the best people.”
Anderson said the property's goal is to be “a hub for daddy-daughter dates” and a hub for family outings, emphasizing a certain Southern spirit.
Anderson and Feigl put their own money into the new location, with an estimated cost of between $175,000 and $200,000. The two also partnered with Feigle's sister, Kennedy Feigle, and her cousin, Wesley Hibbs.
In addition to its flagship store on Mockingbird Lane near SMU, Pokey O's also has a location inside Heimbaker's Market and Deli in Roanoke, north of Fort Worth. And the food truck reaches other locations, including Tyler, Waco, and Waxahachie.
But company leaders want to focus more on expanding brick-and-mortar stores.
“We're not going to shut it down,” Anderson said of food trucks. “But we're definitely slowing down on that to start focusing on more brick-and-mortar expansion to give and feel the community what we want.”
Anderson and Feigl are looking for more real estate for Porky O's on DFW's east side, including locations like Heath.
